Ingredients

Marinara Sauce:

  • 0.25 cup olive oil
  • 0.5 yellow onion (diced)
  • 3 cloves garlic (minced)
  • 28 ounces crushed tomatoes
  • 6 ounces tomato paste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil

Meatball Recipe:

  • 1 teaspoon Kosher salt
  • 1 teaspoon sugar
  • 0.25 teaspoon crushed red pepper
  • 0.5 cup water
  • 0.3333333333333333 cup milk
  • 3 slices bread

To Finish:

  • 0.5 cup yellow onion (minced)
  • 4 tablespoons unsalted butter (divided)

To make the Marinara Sauce:

  • 2 pounds ground beef (80/20)
  • 2 large eggs

To Make the Meatballs:

  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon coarse ground black pepper
  • 1 teaspoon Worcestershire Sauce
  • 1 pound spaghetti (cooked)
  • 0.5 cups Parmesan cheese (shredded)
  • 2 tablespoons parsley (minced)

Steps

  1. Add the olive oil and onion to the pan and sauté on medium low until very lightly browned.
  2. Add the garlic and let cook for 15 seconds or until you can smell the garlic.
  3. Add in the rest of the ingredients and simmer, covered, on low for 30 minutes.
  4. While the Marinara Sauce is simmering, make your meatballs.
  5. In the bowl of your stand mixer add the milk to the slices of bread.
  6. Melt the 2 tablespoons of butter in a pan and add the minced yellow onions.
  7. Cook them on medium low until translucent but not browned, about 4-5 minutes.
  8. Remove from heat and let cool.
  9. In your bowl with the milk soaked bread add the rest of the meatball ingredients including the cooked onions.
  10. Mix it on low until the bread is broken apart and the meat is combined with the ingredients (using the stand mixer and not your hands helps keep the mixture cold and tender).
  11. Using a meatballer/ice cream scoop or your hands scoop them into balls about the size of a ping pong ball, about 1 1/2" inches.
  12. Add the rest of your butter to your skillet and cook on medium high on all sides for a total of 4-5 minutes.
  13. Add the spaghetti to the pot and stir well to combine and heat through.
  14. Serve in bowls topped with parsley and Parmesan cheese.
