  • 1 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsweetened applesauce
  • 0.25 cup mashed banana
  • 0.5 cup plain Greek yogurt
  • 1 tablespoon honey

Steps

  1. Preheat the oven to 350°F and grease a 6-inch round cake pan. Line the bottom with parchment paper.
  2. Whisk together the flour and baking powder in a medium bowl until evenly combined.
  3. Beat the egg in a separate bowl, then stir in the applesauce and mashed banana. Mix until no large banana lumps remain.
  4. Fold the wet ingredients into the dry ingredients until just combined. Do not overmix. The batter will be thick.
  5. Pour the batter into the prepared pan and spread it evenly to the edges. Tap the pan on the counter twice to release air bubbles.
  6. Bake for 25 to 30 minutes at 350°F until a toothpick inserted in the center comes out clean or with a few moist crumbs. The top will be golden brown.
